Why? It's ubiquitous. Municipal WiFi is on the rise, as US cities like San Francisco, Philadelphia, Seattle, and New Orleans move to provide networks, often for free.
Businesses are also into providing data access; see McDonalds, and Starbucks. The technology making all this possible is WiFi, more commonly known as 802.11b/g, and also known as the wireless technology used in Intel's Centrino brand; and it is capable of providing either a 11 Mbps or 54 Mbps connection, although internet speeds will be limited by providers.
Which phones support this? Well - the entire E-Series (E60, E61, E70), and many of the N-series phones (N80, N91, N92).
Before this we had nary a peep about how WiFi would actually be implemented - we knew that there would be some form of UMA support, but now we know more: kinda.
Ohenri from howardforums had the chance to play with an N80 - and he says to "expect all the things that you're accustomed to in Wifi connectivity." We also have two nice pictures - one showing the Nokia N80-3 searching for WiFi hotspots, and another showing that it will have a MAC address.
